Despite the name, Jersey Black Butter (lé nièr beurre) contains no butter — it's a spiced apple-and-cider preserve cooked communally overnight in a huge copper bachîn. The National Trust hosts an annual late-October weekend at The Elms where visitors can stir the bachîn, peel apples and taste the finished jet-black spread.
